How Do You Make Pumpkin Spice?
Before Starbucks brought fame to pumpkin spice through the PSL, espresso with steamed milk, pumpkin, cinnamon, and nutmeg flavors topped with whipped cream; pumpkin spice was a staple in American kitchens. First published in Amelia Simmons’ 1798 reprint of her cookbook American Cookery; in two spiced-filled pumpkin pie recipes. One recipe is made with nutmeg and ginger, the other with allspice and ginger.
It wasn’t until centuries later, during the 1930s, that spice manufacturing companies such as Thompson & Taylor Spice Co and McCormick & Company came out with pumpkin pie spice. It was a revolutionary product of its time: a pre-blended spice mix that, for bakers, meant they could buy one spice instead of several, as well as save time in the kitchen.
And the variation we see in pumpkin spice recipes can easily be explained by the fact that Thompson & Taylor’s version, released in 1933, included nine spices. Whereas McCormick’s blend, initially launched in 1934 and still used today, contains just four spices: cinnamon, ginger, nutmeg, and allspice.
In the 1960s, the name changed from Pumpkin Pie Spice to just Pumpkin Spice, as we know it today.

- 2 teaspoons ground cinnamon
- ½ teaspoon ground ginger

- 5 drops cinnamon essential oil
- 5 drops cardamom essential oil
- 3 drops nutmeg essential oil
- 2 drops ginger essential oil
Homemade Pumpkin Spice Mix
- 2 teaspoons ground cinnamon
- ½ teaspoon ground ginger
- ½ teaspoon ground nutmeg
- ¼ teaspoon ground cloves
Pumpkin Spice Substitutions and Variations
If you are missing an ingredient, the first option is to add more of something else already in the recipe. You can also substitute clove with cinnamon or allspice. If you prefer a fruitiness, try adding orange extract or orange essential oil. And if you like to add sweetness to your pumpkin spice, you can include vanilla extract or vanilla essential oil.
